The hot mixture is driven through a small opening into the homogenizer by applying intense air pressure, sometimes as much as 2,000 pounds per square inch. This causes the fat particles to break down, preventing them from separating from the rest of the mixture.

Cooling and Resting

The mixture is routed back to the pasteurizer, where cold water (about 34°F/1°C) flows on one side of the plates while the mixture flows on the opposite side. The mixture is cooled to 36°F (2° C) in this manner. Then the mixture is then pumped into 5,000 gal tanks and placed in a room set at 36°F (2° C) for four to eight hours to allow the ingredients to blend.

Flavoring

The ice cream is pumped into stainless steel vats with capacities of up to 300 gallons each. The flavorings are piped into the vats. Then the mixture is thoroughly blended.

Freezing

The cartons are then filled at a rate of 70-90 cartons per hour with pre-measured volumes of ice cream. After that, the machine puts a lid on each carton and pushes it onto a conveyor belt. The cartons go along the conveyor belt, where they are spray-painted with an expiration date and a manufacturing code using an inkjet. Following imprinting, the cartons pass through the bundler. Then the plastic shrink wraps are covered each cup.

Hardening

The ice cream must be hardened to a temperature of -10°F (-23°C) before being stored or shipped. The ice cream cartons are conveyed to a tunnel set at -30°F (-34°C) by a conveyor system. Ceiling fans that are constantly rotating cause a wind chill of -60°F (-5°C). For two to three hours, the cartons move slowly back and forth down the tunnel until the contents are rock solid. After that, the cartons are stored in refrigerated facilities until they are distributed to retail locations.
